Method
- Sauté the diced chicken breast chunks in the avocado for 2-3 minutes on each side.
- Steam broccoli and add to chicken in the electric grill pan. You can microwave the broccoli to steam or steam next to the chicken by covering the grill pan.
- Microwave Seeds of Change pouches. Add to chicken and broccoli in pan.
- Add chicken broth, stir and simmer. Best served in a bowl.
Notes
Here I used Primal Kitchen avocado oil and Pacific Foods low sodium chicken broth.
I prepared in an electric grill pan but other larger raised cooking pans can be used in place of this.
It's possible to divide into 3-4 servings. Three servings would yield about 520 calories per serving, while 4 servings would be 390 calories per serving.
